Freezer Pickles

These freezer pickles are crispy and good.  They’re so good that the first batch never made it to the freezer.  My husband and I put them in salads and sometimes just ate them out of a bowl. The concept for freezer pickles is to freeze them in a brine and once thawed they retain there freshness and crunch.  I’ve never tried this before but thought I’d give it a try.  I’m excited about the possibility of having tasty cucumbers in the winter.  Enjoy!

Ingredients

7 cups thin sliced cucumbers with peel
1 large sweet onion, medium sliced
1 cup red pepper thinly sliced
1 tablespoon sea salt
1⁄2 teaspoon celery seed
1 cup white vinegar
2 cups sugar

Instructions

Combine all the ingredients in a bowl.
Stir well, cover and refrigerate for 3 days. Stir every day.  Pack into freezer containers and cover with brine.  Freeze  and thaw before serving.
